Mocha Blondie Protein Coffee Cake

Caramel, Mocha, chocolate, coffee, and Vanilla in delicious harmony. Using @pescience Select protein (30% off at pescience.com with “driven”) and Mocha @epicspreads so good.

Ingredients:
🔹1 cup @kodiakcakes Power Mix
🔹2 scoops Blondie Select protein
🔹2 tbsp Mocha Epic Spreads (or PB)
🔹1 tbsp instant coffee granules
🔹1/2 cup 0% greek yogurt
🔹2 tsp Stevia
🔹1 tsp baking powder
🔹1 egg
🔹1 tsp caramel extract
🔹1 tsp vanilla extract

Directions:
🔹Preheat oven to 375
🔹Mix Kodiak mix, spread, 1 scoop protein, coffee granules, stevia, baking powder, egg, and extracts in a large bowl.
🔹Add enough water for pancake batter thickness.
🔹Transfer to a small, greased cake pan and bake for 15-20 or until a toothpick comes out clean
🔹Let cool, while mixing yogurt with last scoop of protein (and extra spread and sweetener if you want it up a level)
🔹Transfer that to a ziploc and cut the corner out, pipe onto top of cake
🔹Optionally drizzle chocolate over it and top with a Toblerone 😉
