Speculoos Stuffed Snickerdoodle protein cookies

🔹1 scoop Snickerdoodle Select protein
🔹2/3 cup AP or whole wheat flour
🔹1/2 tsp baking powder
🔹1.5 tbsp coconut oil (melted)
🔹1.5 tbsp milk (I used unsweetened cashew)
🔹2-3tbsp Splenda (or 1.5-2 tsp stevia)
🔹3 tbsp Speculoos cookie butter (Trader Joes carries a good one)
🔹1 tbsp splenda
🔹1 tsp cinnamon

🔹Preheat oven to 325, grease a cookie sheet or line with wax paper.
🔹In a large mixing bowl, whisk together protein, flour, baking powder, and sweetener.
🔹Add the wet ingredients and mix well, more milk may be needed. It should form a large, not sticky dough ball.
🔹Tear off small chunks and roll into balls (18-20 is a good amount)
🔹Flatten half these onto the cookie sheet, scoop 1 tsp (or more) cookie butter onto the centre of each.
🔹Flatten the other dough balls, lay on top of each cookie and pinch the edges together, I was able to then form it into a sphere fairly easy
🔹Roll these balls in the Splenda/cinnamon, in a bowl.
🔹Bake 10-12 minutes, tops will be firm, bottoms just golden brown, let cool.
