White Chocolate Mint Protein Cheesecake

Ingredients:
1 scoop White Chocolate Mint Select protein
500g FF cream cheese
3/4 cup 0% greek yoghurt
1 egg + 1 eggwhite
1/2 pack white chocolate pudding mix (SF/FF)
1/2 cup splenda
1 tsp peppermint extract
1 tsp vanilla extract

Crust:
100g vitafiber syrup (or use 3 tbsp butter)
1 cup Oreo baking crumbs

Directions:
1- sit out eggs, yogurt, cream cheese to get to room temperature (prevents cracking)
2- preheat oven to 350 and grease a 9″ or smaller spring-form pan
3- mix together oreo crumbs and Vitafiber in a small bowl, transfer to pan and press to smooth/flatten.
4- in a large mixing bowl beat your cream cheese, yogurt, and splenda together until smooth.
5- mix in all other ingredients well, pour mixture over the oreo base in your pan
6- bake at 350 for 45 minutes, remove and let cool.
7- top if desired (here I just crumbled up peppermint bark)
8- devour.
